starting research on kitchen remodeling.

first, is there a market for used cabinets. thought it a "green" way of disposal. the kitchen is U shaped w/ one of the lengths shorter than the other side. i was thinking of making that wall all well needed storage/pantry. the longer wall currently has no cabinets. making the pantry and adding cabinets to the remaining walls will narrow the kitchen to about 6 ft wide. is that acceptable size? also, is it acceptable for a fridge to to be deeper than the upper/lower cabinets? is it a major expense and work load to move plumbing about 5 ft to an adjacent wall? i have heard some talk of radioactivity in high levels in granite countertops and health concerns. is that something that has been accurately relayed? my appliances are all white and 1/2 of them are only a yr old, the other 1/2 about 3 yrs. they are good quality and really wonder if its worth the expense of replacing w/ stainless. should i just wait til they need replacing and do it then, even if its one or two at a time as they "go up"? any and all info would be appreciated. i am in the infancy of planning as you can tell.

1- is there a market for used cabinets?
No
2- making the pantry and adding cabinets to the remaining walls will narrow the kitchen to about 6 ft wide. is that acceptable size?
If you are talking about 6' in the clear yes. If you include appliances and cabinets then no. Average in the clear between cabinets and appliances is aroung 4' minimum. This allows two people to pass without colliding. A collision with a 3 gallon pot of hot boiling potatoes, or a pan full of bacon grease is not a good encounter.

3- is it acceptable for a fridge to to be deeper than the upper/lower cabinets?
This is up to you. It is strictly a question of astetics.

4- is it a major expense and work load to move plumbing about 5 ft to an adjacent wall?
This depends on what is actually being moved. A small sink isnt a problem. The main kitchen sink with vent stacks, disposal, water lines, electrical, etc. can be a serious project that should be done by a professional plumber, and electrician. This will also require permits. Everything else you mention does not require a permit from your local building inspectors office. Any time you move any electrical, plumbing, windows, bearing walls, doors, roof line, or any part effecting these you must have a permit.

5- i have heard some talk of radioactivity in high levels in granite countertops and health concerns. is that something that has been accurately relayed?
Um.
No. If granite was such a big radiation problem then we would never be able to get within 20 miles of Half Dome. The radiation emmitted from a granite counter top is less than that emitted from a glow in the dark watch dial. Although you might be the unlucky customer that gets a big hunk of U235 in your slab.
